Alipus is a line of artisanal mezcal produced by a number of small distilleries in the state of Oaxaca. This mezcal is made entirely from espadin agave grown in the iron rich soil of the river town of San Juan. It is a smoky, vegetal and sweet mezcal with hints of crispy smoky bacon and tar coasted char grilled broccoli.
