Tradition is comforting, so is this Mezcal made with agave Espadin in San Dionisio Ocotepec, Oaxaca. The agaves are cooked in an underground oven, naturally fermented, and double distilled in copper pots. On the palate, there’s a bit of mesquite smoke, dried citrus peel, and fresh oregano.
